Green Bean Chutney

Green Bean Chutney

If I were the subject of one of those desert island thought experiments – you know, where you have to choose things to bring with you – I’m pretty sure my blender would be one of them. (That’s assuming, of course, that this desert island scenario included ingredients for me to put in said blender as well as some sort of electrical power – either run off currents or magic, I’m not fussy.) Why would I choose to bring a blender? Well, first of all, it would probably be hot so I would definitely need to make shakes like this one (yum, salted caramel!) and this leche de tamarindo. Ooh, and this tropical papaya smoothie would definitely help me cool down too. I also wouldn’t know what kind of protein sources would be available and how they would taste, so the ability to make vegan sauces like this creamy garlic staple, this decadent walnut sauce, and this spicy serrano cream would make anything taste delicious. (Hemp seeds would have to go on the list too as they are the BEST vegan sauce base, IMHO.) And, to finally get onto the topic of this post, my blender would also enable me to whip up bright and flavor-packed chutneys like the green bean one detailed here – keeping life fresh and beautiful.

Chutney was actually the middle name of one of my childhood pets, Mango. (Yes, Mango Chutney). No, I did not name him – my parents get credit for that. (Where do you think my love of food comes from?)

Anyway, this green bean chutney floated into my head one day after wondering what to do with the 1/2 pound of green beans I had left. I knew they’d be gone all too soon if I roasted them with balsamic, which is usually my go-to, and I was feeling kind of like a sandwich for dinner but didn’t really have anything to dress it up with and make it pop. So…I steamed some green beans, then whirred them up in my trusty blender with cumin seeds, tamarind paste, a bit of sugar, cilantro, lemon, some cayenne for spice, and some oil to help it blend. Delicious!

Bright, fresh, and tangy – but with some warmth from the cumin – this chutney is so versatile. I first enjoyed it on a sandwich with goat cheese and a fried egg, but it would also be amazing on potatoes, grain bowls, or mixed with a bit of yogurt/sour cream for a creamy sauce. You can also enjoy it by the spoonful, which I did rather too much of that first night. (I mean, gotta scrape out the blender, right?) Luckily, the recipe made a cup so even after binging on it, I had plenty to pack up and store in the fridge – ready to make the next meal pop.

Quick & Dirty Coconut Chutney

Let me just say right off the bat that this is not a traditional coconut chutney recipe. For starters, instead of using fresh coconut that you then have to chop or grate before grinding to a paste, I use shredded, dried coconut softened in boiling water. There is also no tempering oil – I just add a little chili, cilantro, and lime juice and away we go!

The result? A surprisingly close approximation to the coconut chutney you might be used to eating. It can certainly be served immediately; however, if you want it to more closely resemble a chutney made with fresh coconut, let it sit in the fridge overnight. The chutney will absorb more liquid and the texture will be closer to fresh. Of course, if you go this route, you may need to add some extra lime juice the next morning as acid tends to mellow in the fridge. So, if this happens, just remember the words of Harry Nilsson.

Now, you may not want to DRINK this coconut chutney a la Nilsson, but you will want to dollop it on all manner of dishes. It is wonderful on Indian-spiced potatoes, dals (Indian lentil stews), or spicy vegetables. Try it on these buckwheat kati rolls, chickpea cakes, cauliflower steaks, or with this lovely mung bean salad.  And vegans – wherever you might crave raita, try this instead.

Baingan Bharta

Some food has a season, and baingan bharta is one of those foods. One of my all-time favorite Indian eggplant dishes, baingan bharta is best enjoyed at the intersection of two important external realities:

  1. Eggplant and tomatoes are in season
  2. Keeping the oven at 450°F for an extended amount of time doesn’t make you want to kill yourself nor result in AC bills that trigger thoughts of bankruptcy.

Now, more often than not, when one of these considerations rings true, the other does not. However, thanks to this very late autumn, eggplants and tomatoes are still in abundance at the Greenmarket, even while the weather starts to turn a tad chillier. And that means – time for baingan bharta!

This recipe is onion and garlic free, but extremely flavorful. Eggplant is roasted until very tender, and then the flesh is cooked with scallions, ginger, serrano, tomatoes, and the perfect blend of Indian spices. Finished with some fresh lime juice and cilantro, this is eggplant at its best.

Buckwheat Kati Rolls

Buckwheat Kati Roll

I could have called these Indian buckwheat crepes, Indian buckwheat tacos, or Indian burritos. Depending on how large, thick, or thin you make the buckwheat wrappers, and the way you choose to roll/fold them, they could be the base for all manner of delicious meals! But the filling screamed kati roll to me. And I loved the idea of a nutty, protein-packed buckwheat wrapper in place of the traditional paratha. So kati rolls they are.

For those of you who don’t know what I’m talking about, a kati roll is comprised of some deliciously spiced filling (either meat-based or vegetarian) wrapped in a buttery Indian flatbread (the aforementioned paratha). Kati rolls are sometimes made with other types of flatbread – hence my justification for making buckwheat ones!  If you live in the New York area, I recommend checking out Desi Galli – they have some really yummy filling choices and make a very nice chickpea flour wrap.

So enough about other kati rolls, let’s get to this one. Golden fried paneer, spicy chickpeas, and a bright carrot slaw that will knock your socks off all rolled up in a delicious nutty buckwheat wrapper. Highly recommended with my Mint Chutney or a nice raita. And if you don’t feel like making a batter, you can always turn this into a bowl and serve the fillings over your favorite grain. You can also make the wrappers in advance and store them wrapped in foil in the fridge or the freezer – just reheat them in a lightly oiled cast iron pan like you would a tortilla. (They are arguably even better this way because the outside will crisp up slightly when you reheat them, but they’ll still remain tender on the inside and flexible for rolling/folding.)

Ginger-Turmeric Tonic

Ginger-Turmeric Tonic

The weather these past few days has been so lovely that it was particularly difficult to wake up this morning and realize February is back. Yup, it is cold, grey, and wet. I also woke up with a sore throat, which added insult to injury.

On days like this, I’m really glad I keep fresh ginger and turmeric in the house at all times – a bit of fiery, warming tonic was just what I needed to overcome the gloom, nip the sore throat in the bud, and look ahead to sunny skies and carefree days.

Whether you’ve been overdoing it on sugar and sweets as much as I have lately, or you just need a bit of extra immune support, or you are super duper healthy and feel amazing, I recommend this tonic to you. Ginger and turmeric are both extremely medicinal and can do wonders for your body! Both are anti-inflammatory (turmeric, especially, has an often-cited compound called curcumin that does everything from inhibiting cancer cell growth to relieving pain in people with joint issues), amazing for maintaining overall well-being and health, and great for your digestive system. If you are interested in learning more about the health benefits of turmeric and ginger, I definitely encourage you to do your own research – there are way too many different health benefits to do them all justice in this short post!

Besides doing wonders for your health, I also find this tonic to be incredibly delicious. It’s wonderfully warming and intensely spicy – if you’re the type who always asks for extra ginger in your chai or juice, this drink is for you. You will feel the Bern! (Er…burn. I meant burn. I am not in any way affiliated with Bernie Sanders’ campaign. I will be voting for him, though :p)

I should mention that if you aren’t a fan of ginger or spice, this drink is probably not for you. You may want to return to some green tea, despite its far inferior light green color. (This tonic has the most beautiful dark reddish tint to it!)

Warming Spiced Lentil Soup

Spiced Lentil Soup

There is something so incredibly nourishing about a nice, warm, hearty bowl of soup. And the aroma that fills the kitchen while it’s gently simmering on the stove is second to none. In fact, this particular soup smelled so good that I was reminded of the children’s story The Tale of Despereaux, which is set in a kingdom that holds soup in such high esteem that they have a holiday devoted to it every year! (That is, until a visiting rat is so entranced by the aroma of the Queen’s soup that he accidentally falls into her bowl, causing her to die of shock, which in turn causes soup to be outlawed in the kingdom!) Horrible, right? And what’s with rats being foodies in children’s stories, btw? (I recently rewatched Ratatouille.)

Anyway, I’m not going to ruin the book for you, but suffice it to say that the kingdom had it right: soup is so good that we really should have a holiday devoted to it. And if it were ever outlawed, I would totally join in on the illegal soup making that happens in The Tale of Despereaux. (Yes, there is illegal soup making … because soup is just that good!)

Indian Cauliflower Steaks with Spiced Chickpeas and Spinach

When I think of vegetables that are naturally beautiful, cauliflower definitely isn’t the first one to come to mind.  It’s oddly shaped, lumpy, blandly colored (although colorful cauliflower does exist, but not in most grocery stores), and just downright unglamorous. I mean, if asked to choose a vegetable based on beauty alone, most of us would go for the bright red, perfectly round and lusciously smooth-skinned cherry tomato, or the beautifully-tiny purple and white striped fairy tale eggplant, or possibly one of endless gorgeous varieties of microgreens. Certainly not lumpy old cauliflower.  Yet cut a cauliflower in the right way, and suddenly you have something that definitely starts to compete – maybe even outright beat – those perky, perfectly shaped, and vibrantly colored veggies in the beauty department.

The cauliflower steak, ladies and gentlemen, is the pinnacle of unexpected elegance – it’s the point in your favorite (or least favorite) teen movie when the nerdy girl lets her hair down at the homecoming dance or house party or wherever else the super original plot sets the pivotal scene, and Freddie Prinze, Jr (or whoever is playing the Freddie Prinze, Jr role) suddenly realizes what he’s been failing to see.  I mean, who would have thought cauliflower could be so elegant? And so visually striking?

And that’s where the She’s All That comparisons can end (phew!) Because while – if memory serves correctly – Freddie Prinze, Jr’s character had to work quite hard to win Laney’s heart, cauliflower steaks are super easy to prepare. They are also incredibly versatile, really fun to eat, and naturally gluten-free (grain-free too!)

Mung Bean and Apple Salad

Mung Bean and Apple Salad

At the greenmarket this morning, I started noticing “First Crop of 2015” signs on some of the apples. If that’s not a sign of fall on the horizon, I don’t know what is.

Much as I’m still holding fast to summer (and I’m certainly not about to stop posting summer recipes just yet!), I’ve begun mentally preparing myself for fall. And there are some nice things to think about: colorful trees, crisp air, squash, pumpkins … in fact, if it didn’t signal the impending doom of winter, fall would probably be my favorite season. But I’m not quite ready to let go of summer just yet.

So I would call this a transitional salad.  It’s the perfect light bite for a hot summer day, but there is also something about it that forecasts the coming of fall. Maybe it’s the nuttiness and heartiness of the mung beans, conspiring with the crisp tartness of the apple. Or maybe it’s the pinch of nutmeg in the cumin-spiked lemony dressing. Perhaps it’s something else entirely. While I can’t pinpoint exactly why this salad seems to straddle the line between summer and fall, I can tell you that you should make it. And then eat it. And then make it again.

Triple-C Slaw

For all you Sesame Street fans out there (best children’s show ever!), this post is brought to you by the letter C. Why? Because Cabbage, Carrots, and Coconut happen to make the perfect slaw.  And it’s pleasantly Crunchy. Add in some Cilantro, and you could even call this Quadruple-C Slaw. Cilantro begins with a soft  C, while Cabbage, Carrots, and Coconut all begin with hard  C‘s. But what about the raisins? They don’t belong here! Try as you might, you won’t find a soft  C or a hard  C anywhere in that seven-letter word. Ah, but the addition of raisins to this slaw will Caress your palate and leave you feeling quite Content.  So you see, the word raisins gives us two more beautiful C words!

Mint Chutney

Mint Chutney

“Chutney” was the middle name of the cat my family had when I was growing up. (His first name was Mango.) I can’t take credit for naming him, but I can tell you that my love for Indian chutneys started early. My favorites are the mint and tamarind chutneys – I ALWAYS load up on these whenever I eat at an Indian restaurant. I love how the coolness and freshness of the mint compliments the spicy richness of most Indian dishes. Unfortunately, I’ve never been able to justify buying a jar because every single one I’ve seen has artificial coloring in it – kinda gross. Luckily, homemade mint chutney is super easy and very customizable! I really like the ratio of cilantro to mint I’ve specified in the recipe, but if you like it more or less minty (or more or less limey), feel free to play around with it!
