Bourbon-Sour Cream Ice Cream for the 4th of July!

Bourbon-Sour Cream Ice Cream

You may have noticed that I tend to put whiskey in my holiday blog posts – at least once a year.  There’s this year’s Irish Whiskey Banana Bread (St. Patty’s Day), last year’s Cinnamon-Sugar Sandwich Cookies with Chocolate-Whiskey Cream (Valentine’s Day), and my whiskey-glazed Apples & Honey Cake from Rosh Hashanah 2015…er…5776 (Jewish calendar). In any case, I’m beginning to realize I may have a whiskey dessert problem.

But what a wonderful problem it is! Bourbon lends itself perfectly to ice cream. In fact, no matter what flavor I decided to create, it probably would have included at least 1 tablespoon of the stuff since adding alcohol to homemade ice cream helps make it creamy and prevent iciness. (So does arrowroot starch, incidentally, which you’ll also find in this recipe!) And the caramel notes of the bourbon with the tanginess of the sour cream – it really can’t be described in words.

In addition to tasting divine, this ice cream recipe is also lactose-free, low fodmap, egg-free, coconut-free, soy-free, and nut-free! Interestingly, I haven’t been able to find a lactose-free ice cream recipe that doesn’t use coconut milk or nut milk, and really wanted one, since coconut can tend to taste quite coconuty and nut milk doesn’t quite have the proper texture to yield a creamy result. This probably has something to do with the fact that traditional ice cream is made from a blend of heavy cream and milk, and, while there is plenty of lactose-free milk on the market, I don’t think there is any heavy cream. There is, however, lactose-free half and half and lactose-free sour cream. I had a hunch that thickening the half and half slightly with some arrowroot starch (which also prevents an icy ice cream texture) and then blending it with the sour cream might be a winning combo –  and I’m happy to say I was right!

This ice cream is the perfect balance of creamy, rich, tangy, and sweet. Whether you’ve never had sour cream ice cream before, or you’re already a convert, you really must try it! So plug in that ice cream maker, grab yourself a bowl, and get ready for some fireworks.

Irish Whiskey Banana Bread

Irish Whiskey Banana Bread

What better way to celebrate St. Paddy’s day (which is in just 2 days!) than with a loaf of whiskey-infused banana bread?  This sumptuous treat will fill your home with the most incredible, cozy, delicious aromas — aromas that (fair warning) may prompt you to cancel your night out, wrap yourself in a Shamrock blanket, and call some friends to help you make a dent in the conveniently already-open whiskey bottle until it’s time to devour that warm loaf of banana-y goodness.

What’s that? Your friends aren’t gluten-free? No worries. I gave this to my husband and he swore he couldn’t tell it was sans gluten. The loaf rises and browns beautifully. It has a crusty outside and a warm, cakey inside. And the flavor? Don’t get me started. This banana bread is the perfect sweetness. It’s just banana-y enough with a salty, buttery undertone (yay for salted butter in baking!) and an almost caramel or deep vanilla-like note from the whiskey infusion that will leave you licking up the crumbs like there’s no tomorrow.

Cinnamon Sugar Sandwich Cookies with Chocolate-Whiskey Cream

Cinnamon-Sugar Sandwich Cookies

Do I even need to write this post? Doesn’t the title say it all?

Okay, fine.

Three days before Valentine’s Day, I realized I would be remiss if I didn’t post a delicious treat for you to make for your honey (or your mom, cat, best friend, self … whoever you are planning to spend Valentine’s Day with this year!) Disclaimer: Please don’t actually feed these to your cat; that would be pretty dangerous. Anyway, I could probably have whipped up a nice pudding, or mousse, even a brownie…and it would have been fairly straightforward and probably wouldn’t have taken me two days to create, photograph, and post. But…for some reason, I had my heart set on a sandwich cookie. Not just any sandwich cookie – a grain-free, dairy-free sandwich cookie with a chocolate-whiskey filling. (I’m very sorry, vegans, this cookie does have 1 egg in it and I didn’t have time to try subbing it with a flax egg. In the process of developing these cookies, however, I did come up with a delicious 5-ingredient vegan cinnamon lace cookie that I will be posting soon!)

Why did I have my heart set on a grain-free, dairy-free sandwich cookie with a chocolate-whiskey filling? Who knows. Possibly it was a dream I had (food is a main character in the vast majority of my dreams), or maybe I liked the romantic notion sandwich cookies suggest – two halves making a whole, each one bringing a little bit of delicious (aka chocolate-whiskey cream) to the relationship, all that sentimental dribble.

In any case, I knew what I wanted to make, and even though I started this process with only three days between me and Vday, the sandwich cookie gods were with me!
