Creamy Carrot Soup

I first made a version of this carrot soup on a cold, blustery “spring” day just like today, when all I wanted to do was curl up under a blanket and eat something comforting. It came out so flavorful that I forgot about the weather altogether. In fact, I had to abandon my original plan of a carrot-cheddar chowder because the soup tasted awesome and I hadn’t even added the cheese yet.

Despite the absence of cheese, the “finishing cream,” as I’ve termed it, gives this soup a cheesy flavor. It’s rich and luscious, with the bright savory notes of dill, chives, and thyme complimenting the sweetness of the carrots perfectly. A couple spoonfuls of this could do wonders for a mac & cheese (I’ve got comfort food on the brain) or any type of grain-based casserole. That’s if you have any left over, of course. I served it with some smoky tempeh strips and sautéed swiss chard for a very satisfying lunch, and we ate the whole pot.

St. Paddy’s Day Cabbage with Caraway and Thyme

St. Pattys Day Cabbage

The first word used to describe cabbage isn’t generally “decadent,” but when it’s caramelized in butter with leeks, caraway seeds, and thyme,  I’d say decadent is a pretty apt description. It’s maybe not quite as decadent as last year’s St. Paddy’s Day recipe, which fell in the realm of sweets and desserts (Irish whiskey banana bread!), but – as a side dish, it’s pretty damn delicious. And Irish to boot!

Green cabbage is traditional for St. Paddy’s Day, and butter, caraway, and thyme are often used in Irish cuisine. I don’t know if it’s traditional or not, but I happen to like this with a little pinch of ground mustard thrown in for a slight kick. (I actually thought about serving this with a mustard cream but decided the cabbage was so good on its own I didn’t want to overwhelm it with a sauce.)

Serve this cabbage alongside whatever your St. Paddy’s day meal pièce de résistance happens to be. Or, if you are looking to create a vegetarian pièce de résistance, try using this cabbage as a stuffing for baked potatoes and serve them with the mustard cream I almost made (combine mustard, sour cream, and minced fresh parsley). Options abound! (Oh, and you might as well make the aforementioned whiskey banana bread for dessert!)

Sample Thanksgiving Menu + Stuffed Kabocha Recipe

Stuffed Kabocha

Thanksgiving in my family usually involves a lot of arguing. It’s not the arguing you’d expect. Questions like Who’s going to host? When’s it going to be? and Who’s coming? are not major issues. What can fuel heated debates, however, are questions like What’s on the menu? Who’s cooking? and When can I put my dish in the oven – yours has been in there forever!

This year, I (somewhat miraculously) managed to get complete menu control, in exchange for cooking and hosting. Since my brother is vegan and I’m still on a mostly Low FODMAP diet, holidays can be tricky, and we generally end up with a menu where everyone has multiple options, but nobody can eat everything. This year, however, I decided to create a menu that is entirely on both of our diets, and still screams Thanksgiving. I hope it gives you some ideas!

Thanksgiving Menu 2017 (Vegan & Low FODMAP)

Assortment of dips with crackers and crudite
Buckwheat crackers
Blue corn tortilla chips
Veggie spears

Roasted red pepper dip
Garlic oil, red pepper flakes, coriander, cumin

Walnut dip (similar to this one)
Walnut, hemp, hot paprika, thyme

Oyster mushroom dip
Mushroom, zucchini, carrot, chive, basil

Main Meal
Stuffed kabocha squash (recipe below)
Quinoa, walnuts, herbes de provence

Mashed potatoes with oyster mushroom gravy
Yukon golds, garlic oil, fresh thyme

Balsamic-roasted green beans
Dijon, balsamic, toasted pumpkin seeds

Brussels sprouts
Hot paprika, fresh dill

Coriander-pepper tofu
Chives, coriander, black pepper, tamari 

Veggie cakes
Millet, cabbage, lentil, middle eastern spices

Roasted carrots
Citrus, garlic oil, red pepper flakes

Herbed focaccia

Cranberry Sauce

Dessert
Chocolate pudding 

Pumpkin Pie
Pecan-coconut crust

Salty Oat Cookies (vegan version)

Berry Crisp
Crispy quinoa flakes, berries

Savory Waffles with Caramelized Cabbage

Savory Teff Waffles with Caramelized Cabbage

It took me a while to get on the waffle train. Give me a hefty stack of pancakes any day but I never got the fuss about waffles…weren’t they just like breadier pancakes, except NOT fried in butter? What was the point?

Once I got a waffle maker of my own, however, I didn’t just get on the train – I may have taken a turn in the driver’s seat! I think I made a different type of waffle every day for the first week – cornmeal, raspberry-chocolate chip … if you can think it, I probably made it. What makes them so satisfying? It’s hard to say. My waffle maker makes ginormous waffles – like seriously colossal – which definitely helps: sitting down to a gorgeous piece of bready goodness that takes up your whole plate certainly makes for a dramatic meal. Unlike pancakes, waffles also have this fantastic crispy-on-the-outside (if I let them cook a tiny bit past the “ready” light on my machine) soft-and-fluffy-on-the-inside thing going on. And one of the best things about waffles, in my humble opinion, is that you don’t have to stand by the stove frying them OR worry about making them come out the same size and shape. With a waffle, everything goes right into your handy dandy waffle maker, and they are guaranteed to come out beautifully cooked and perfectly shaped every time.

I was so waffle-happy, in fact, that I decided to create a savory waffle that wouldn’t be confined to just breakfast. Don’t get me wrong: these waffles do make a fantastic breakfast, but they are equally lovely for lunch, dinner, afternoon snack, late-night snack, you name it. They will dress up each and every occasion to put food in your mouth, period. The mix of teff, sorghum, and millet flours gives them a hefty dose of protein and whole-grain goodness as well as a wonderful flavor that I’ve spiked with thyme, herbes de provence, and parmesan: think pizza goldfish but swap out the mass production and junk food aspects with artisan bakeries and a dose of elegance and you’ll be halfway there. (I know that’s weird but you’ll see what I’m talking about when you make them!)

You can top these beauties with any number of delicious toppings, but my favorite is the caramelized cabbage in this recipe (which you should really make even if you have no intention of making waffles – it is seriously the best way to eat cabbage!) along with a poached egg. The cabbage is oh-so-buttery and sweet, delicately spiced with dill, paprika, and just a touch of allspice. And when you cut into the whole ensemble, that egg yolk will run all over your waffle and form the perfect sauce.

Kale Mac and Cheese (Plus a brief note about FODMAPs)

Kale Mac and Cheese

Happy New Year everyone! I’m excited to be back from my blogging hiatus and absolutely ecstatic about this Kale Mac and Cheese. With all the craziness of the past few months (yes, I’m talking about the election and beyond) I, for one, have been craving comfort food: hearty, flavorful, cheesy goodness  to get us through the cold until the sun comes out again.

You may notice that, unlike 99.9 percent of my savory recipes, this one contains no onion or garlic (gasp!) You might also notice that that this recipe is tagged “Low FODMAP,” and if you were to check out the “By Diet” section of my blog, you’ll see that in addition to filtering recipes by vegan, dairy-free, grain-free, egg-free, etc., you can now search for recipes with this tag. So what does this all mean? And what the hell are FODMAPs?

I’ve waffled back and forth as to whether I wanted to share the reason for my blogging hiatus (Hint: it has to do with FODMAPs) and decided that I owe it to anyone who might be in a similar situation. So if you are struggling with SIBO or the Low FODMAP diet, or you just want to hear my musings on the topic, click here. I’ll explain what those terms mean, and talk a bit about my personal journey with them. For the rest of you, don’t worry: I triple promise that this Kale Mac and Cheese – and all of the recipes I share here – are NOT just intended for those on a special diet. They are packed with flavor and designed to appeal to anyone who enjoys deliciousness. In fact, many of the recipes I’ve shared here are already low FODMAP; I just hadn’t previously identified them as such.

Rustic Lentil Stew with Balsamic and Olives

Maybe I’m just lazy, but I think the bears have it right: when fall rolls around, my first inclination is to start gathering as much energy as I can and preserve the hell out of it. This means that lately I’ve been craving nourishing, warming, simple meals. Meals that quickly restore lost energy and don’t make you use that newfound energy to clean dreaded piles of dishes and appliances. (Seriously – I can’t tell you how many times I’ve adjusted my dinner plans just because I didn’t feel like dirtying the blender.)  So one-pot meals are my friend, right now. Especially when those meals are super rich in iron, protein, and fiber, and make me feel like I’m wrapped in a nice, fuzzy, blanket. (Okay, I may have eaten this while wrapped in an actual blanket…)

But seriously, this stew is comfort food at its best. A simple, protein-packed, one-pot wonder. It’s delicious by itself, and even better accompanied by a nice crusty hunk of gluten-free French bread.  Better yet, it’s super cheap to make and uses simple ingredients that you probably already have on hand. Instead of requiring vegetable broth (for me, the one ingredient I never seem to have in my pantry/fridge when I want to make stews) this dish creates its own umami-laden broth by marrying the sharp saltiness of the olives with the subtle sweetness of the balsamic.
