Salted Caramel Almond Shake

If you were to blindfold me and give me something to eat or drink, I’m fairly confident in my ability to tell you what it is and what’s in it. Similarly, when I whip up this concoction or that one, I don’t usually run into too many surprises when it comes to the final product. It generally tastes about how I expected it would – sometimes a little bit better, of course, and sometimes a little bit worse. But when I took my first sip of this shake, I was shocked. Like, actually shocked. It may sound hyperbolic, but I believe this is one of the best shakes I’ve ever had and I was expecting it to be one of the worst. I’m calling it “unbelievable” because I definitely wouldn’t believe you if you gave me a glass of this and then told me the ingredient list.

Why would I purposefully create a shake that I thought would be mediocre? Pure laziness. My blender was in the fridge because I had made a miso-sesame dressing and was still working on using up the leftovers. And I wanted a banana shake. The thought of scraping all that dressing out, cleaning the blender, making the shake, and then re-cleaning the blender was, shall we say, a bit too much. But I really wanted that shake.

Now, I do know that culinary creations like miso caramel – even miso ice-cream – exist and are enjoyed. But this dressing also contained capers, black pepper, and olive oil. There was no way it would work in a shake. I resigned myself to maybe having some kind of half sweet, half savory concoction because that sounded better than cleaning the blender. In went 1 1/2 very ripe, frozen bananas, a dollop of salted almond butter (oh god, did I really want to add more salt?) and a hefty dose of unsweetened almond milk. I whirred it all up, anxiously awaiting what I was fairly certain would be a regrettable decision. And then I took a sip.

It was….it was…it was like going to one of those super gourmet, trendy ice-cream parlors that always have lines out the door and it actually meeting all the hype. I mean, it tasted like a dairy-laden, sugar-laden, salted caramel ice-cream shake with a hint of sesame and almond! And it was actually just bananas, a very healthy hippy-style miso dressing, and almond milk. HOW DID THIS HAPPEN? The almond butter and sesame flavors played perfectly with the front-and-center caramel flavor, and the whole thing was just the best sweet, cold, creamy, nutty, nuanced concoction I’ve had the pleasure of tasting in a while.

Ironically, I was originally going to post the miso-sesame dressing, but then figured – eh. Everyone and their mother has a miso dressing. Sure, it’s an enjoyable way to eat a salad, a lettuce wrap, or a grain bowl. But is it blog-worthy? Meh. This shake, however, (which requires first making the standard miso-dressing) is most assuredly blog worthy. And drinking worthy. My enjoyment of it was a little bit tinged by anxiety about whether I would be able to recreate it – after all, I just used a blender containing some dressing – I didn’t measure amounts at all! I’m happy to report, however, that I was. The recipe is below. Be prepared to be shocked.

Banana Spice Muffins

Banana Spice Muffins

I didn’t plan to bake today. But sometimes, inspiration just strikes and the mixing bowls have to come out. Of course, knowing your baking triggers can be helpful when it comes to acceptance. Here are mine:

-Rain or snow

-The remnants of rain or snow (snow-covered trees, clouds of fog, etc.)

-Waking up early without an alarm

-A clean kitchen

Today, waking up at 7 to a light dusting of very pretty snow and realizing that I had the morning free set my internal baking clock to “Go.” And why fight that? Especially when it resulted in these surprisingly healthy (you wouldn’t know it from the taste) banana spice muffins that happen to be gluten-free, dairy-free, and refined-sugar free. Yum!

Tangy “Yogurt” Shake with Cardamom, Banana, and Lime (Yogurtless)

Yogurtless tangy yogurt shake

I’m not sure who the audience is for this recipe but I’m quite curious if you’ll love it or hate it. That’s a new one for me, since I normally post recipes that I’m fairly confident will appeal to most of my readers. But hey – where’s the fun in that? Sometimes taking risks yields more interesting results.

Like it did with this shake. Bored with the standard (albeit delicious) shake combos of banana, raw cacao, and various nut butters or the fruiter varieties like this tropical papaya smoothie, I decided to try something weirder. And after the first couple sips, I honestly couldn’t tell if it was good or not. Yet there was something strangely addictive about it. I took another sip, and another. Then it dawned on me. It almost tasted like yogurt…

This realization, along with a tangy, refreshing quality that told my brain to keep drinking, led me to decide that I was going to post this. Because there’s gotta be some poor, probiotic-free person who misses yogurt shakes, right? Maybe? Or maybe there are others like me who are looking for a shake that’s just a bit different?

(By the way, in case you are curious why it tastes like yogurt, my best guess is the creaminess of the frozen banana and hemp seeds combined with the tanginess from the lime juice. The cardamom also emphasizes this yogurt-like quality and is a nice warming counterpart to the tang.) I hope you enjoy it, but I’m not making any promises!

Maple Teff Muffins (and a Review of Tenera Grains Teff Flour!)

As the rain pours down in New York City and gusts of wind slam against our windows, I’m drinking a nice, hot cup of earl grey tea and enjoying a basket of fresh-from-the-oven teff muffins, slathered with grass-fed salted butter. I haven’t felt this peaceful in a while.

Later today, things will get done. The state of the bedroom matches the weather – it’s a tornado of papers and clothes that need to be sorted and folded. And laundry awaits, too. But right now, sitting at the table watching the cat admire the rain, muffins, tea, and butter are all-consuming.

I can thank the kind people at Tenera Grains for making these muffins happen. Seeing that I use teff quite frequently in my recipes (check out more teff flour recipes here), they offered a bag of their freshly milled flour in exchange for an honest review. It’s been sitting in the cabinet for a while now, urging me to make injera, or waffles, or pizza crust, or … the call that finally got through to me … muffins! I absolutely love teff flour in muffins because it’s high in protein (which gives you a nice boost in the morning, helps cut the sweetness, and adds moisture to gluten-free baked goods) and has a hearty, nutty flavor that reminds me of bran. In fact, these muffins are quite similar to my Mystical Applesauce “Bran” Muffins which also use teff, with a few notable changes:  banana instead of applesauce, maple syrup instead of agave, and more teff flour. Just like that recipe, however, I’ve used the same baking powder/baking soda combo (see why here) and remained true to my tradition of making a “mystical” dozen (11 muffins instead of 12).

Well, Tenera teff flour did not disappoint! The muffins came out moist and delicious – with a lovely, nutty maple flavor and a light and airy texture.

Irish Whiskey Banana Bread

Irish Whiskey Banana Bread

What better way to celebrate St. Paddy’s day (which is in just 2 days!) than with a loaf of whiskey-infused banana bread?  This sumptuous treat will fill your home with the most incredible, cozy, delicious aromas — aromas that (fair warning) may prompt you to cancel your night out, wrap yourself in a Shamrock blanket, and call some friends to help you make a dent in the conveniently already-open whiskey bottle until it’s time to devour that warm loaf of banana-y goodness.

What’s that? Your friends aren’t gluten-free? No worries. I gave this to my husband and he swore he couldn’t tell it was sans gluten. The loaf rises and browns beautifully. It has a crusty outside and a warm, cakey inside. And the flavor? Don’t get me started. This banana bread is the perfect sweetness. It’s just banana-y enough with a salty, buttery undertone (yay for salted butter in baking!) and an almost caramel or deep vanilla-like note from the whiskey infusion that will leave you licking up the crumbs like there’s no tomorrow.

5-Minute, 5-Ingredient Hazelnut Gelato (Vegan, No Sugar)

Summer is coming! It is, it is, it is! I know that some of us eat ice-cream year-round, but for those of you who don’t (who are you??), I think I can say with certainty that it’s time to get started again, rain or no rain. If we act like summer is here, it will come. Okay?? And…according to the always-reliable weather forecast, it is going to be in the 70s and 80s all next week. So let’s celebrate with some 5-minute homemade gelato!

This gelato is seriously delicious. It contains no dairy, no eggs, and no sugar. The secret? Frozen bananas and a Vitamix! Yes, you can be skeptical…but I urge you to try this before passing judgment. It really does taste like gelato and…IMO…banana is not the central flavor. I mean, it’s there – don’t get me wrong – but you don’t have to be a banana lover to like this; you just can’t be a banana hater. (Actually, I gave some of this gelato to my mother and asked her to guess the base, and she didn’t even realize there was banana in it!)

Okay, so let’s get to the five ingredients: we need two ripe bananas which have been frozen solid (to the point where you can’t cut into them to peel them unless you let them sit out for a few minutes), hazelnut oil, coconut cream (which you can buy or obtain by just scooping the cream from a can of refrigerated full-fat coconut milk), a pinch of cinnamon, and mesquite powder. Oh – a pinch of sea salt is also nice, but I’m not counting that in the “5-ingredients” because c’mon, it’s salt!

Have you heard of mesquite powder? It’s a superfood made from the seeds of the mesquite plant, which grows in desert areas, and has been used by indigenous people in Mexico and the Southwest for a long, long time. It has a sweet, caramel-like flavor, a bunch of awesome vitamins (calcium, potassium, iron, magnesium, zinc…), and some protein to boot! It’s wonderful in smoothies, hot drinks, baked goods, raw cookies…and this gelato, of course. In short, I highly encourage you to get some and try it out!

Leche de Tamarindo

Leche de Tamarindo

I don’t know about you, but when late August hits, I start to get a little sad. Summer is quickly waning, and if you’re me, you still haven’t made time to do all of the summery stuff you’d planned! In the New York City area, that means taking advantage of the free outdoor concerts, movies, boat rides, etc. It means braving a long public transit ride to get to something that vaguely resembles a beach. And to many it means getting out of the metro area all together – planning that one, glorious, summer vacation.

This post is a tribute to the vacations I planned, but didn’t take.

In fact, this summer was stacking up to be incredible. One of our friends was getting married in India, another was getting married in Mexico. India and Mexico in one summer? Hell yeah! Unfortunately, the timing of the two weddings was identical. Add  in a new apartment for both of us and a new job for one of us, and we quickly realized a big vacation just wasn’t in the cards this summer. I’m hoping we’ll brave that long public transit ride and get to one of the super crowded beaches New Yorkers flock to before the summer ends. But for now, I’ve decided to channel the tropics whenever I can. And what better way to start than with a fruit that happens to be pretty ubiquitous in both India and Mexico?

Tamarind is a pod-shaped fruit with a tangy flavor that is grown in most tropical areas of the world. If you’ve ever had tamarind chutney (the brown, sweet chutney often served in Indian restaurants), you are already somewhat familiar with its unique taste. Tamarind is thought to have many health benefits, including anti-inflammatory compounds, antioxidants, iron and B vitamins, and dietary fiber to improve your digestive system!

Leche de Tamarindo translates to — quite literally — tamarind milk. Sounds better in Spanish, right? Be that as it may, it tastes amazing whatever language you may happen to speak and wherever you may happen to be spending your summer.

Middle Eastern Shake

Middle Eastern Shake

When it comes to shakes, I’m a pretty picky eater … er… drinker? In my opinion, a good shake must be creamy, smooth, rich, luscious, full-bodied, sweet but not sweet enough to cause a sugar rush, and most importantly, NOT ICY. I can’t tell you how many times I’ve experienced severe buyer’s remorse after shelling out good $$ (shakes are expensive!!) only to realize my “cacao banana power shake” (or some variation thereof) is half ice and half store-bought almond milk with maybe a couple teaspoons of cocoa powder and a tiny piece of banana. Sadness! Anger! Ice! So. Much. Ice.

While I’ll occasionally throw one or two cubes of ice in a shake I make myself (usually because I have a cat shaped ice cube tray and the kitty ice cubes are so darn cute that I can put aside my ice hatred and remember that all things can be good in moderation) I generally find that if all my ingredients are cold, shakes do not need ice at all. And I much prefer them creamy and rich to cold and watery. This Middle Eastern Shake is no exception – it could probably be eaten as a pudding if you’re into that. Personally, I prefer to consume it in shake form (I mean, for one thing, you get more of it: it is so much more socially acceptable to consume a full glass of shake than a full glass of pudding.)  [Read more…]
