Turmeric-Carrot Muffins

January 26, 2021 By Alana 1 Comment

Carrot-Turmeric Muffins

Despite my obsession with carrots, carrot cake and carrot muffins have never really done it for me. I’ve always placed them in the “oatmeal raisin” camp, which to me translates as not my jam. Maybe I’m just biased against desserts with raisins? But something about your run-of-the-mill carrot muffin is just not that appealing to me. Yet when the polar vortex hit the other day, so did the baking bug. And I’m now completely sold on carrot muffins.

But – big caveat – these are definitely not your ordinary carrot muffins. There’s no cinnamon and no raisins: instead, I went with fresh turmeric and ginger, a generous dose of sour cream, a hint of cardamom, and a subtle kick from some ground black pepper. They are also less sweet than a typical carrot muffin, making them a fantastic (and not so sugary) breakfast or snack that is delicious warm or cold. So let me rephrase my previous statement: I’m now completely sold on carrots in muffins – as long as there’s turmeric and sour cream in there too. These are definitely going into my muffin rotation!

In addition to the flavor profile, I’m also excited about these muffins because they are completely nut-free. While I normally depend on a small amount of almond flour to add moisture and tenderness to my baked goods, I wanted to create some muffin recipes that don’t use this somewhat polarizing (because of its cost and because not everyone can eat nuts) ingredient. Since it’s the high protein and fat content that makes almond flour such a great ingredient in gluten-free baked goods, those elements are taken care of by the sour cream, eggs, and butter in this recipe. High protein oat and sorghum flour seal the deal, and – along with a teaspoon of binding psyllium – help to create the perfect texture.

So – whether you are offended by or sympathetic to my stance on the “typical” carrot muffin, I do urge you to try this remix. You can even add in some raisins – if you must. (Just make sure to soak them first.)

Turmeric-Ginger Hot Chocolate

April 17, 2018 By Alana Leave a Comment

Turmeric-Ginger Hot Chocolate

As a morning person, I’m generally refreshed and energized as soon as I open my eyes – ready to tackle whatever the day has in store for me. I do my best work in the morning, and I don’t need coffee or anything else to wake me up. (Afternoons and evenings are an entirely different story, of course.) When I woke up this morning, though, something was off.

I had gotten plenty of sleep, but felt tired and grumpy. I had to leave my apartment early to make it in time for student teaching but couldn’t bring myself to rush. And it felt like a layer of fog covered everything I heard, said, or did. When I arrived at the school where I was student teaching, I was amused to see that the class’s word of the day was “lethargic.” Yup.

Things declined from there. I went to the grocery store to buy zucchini, and they were out. I bought a water bottle that turned out to be unnecessary, and it made my bag uncomfortably heavy. The app I use to display my bus pass kept bugging out, and when I tried to uninstall and reinstall, my connection died after the uninstall. (Of course the bus arrived as soon as this happened!) In short, I was beginning to think I was the new protagonist of the childhood classic Alexander and the Terrible, Horrible, No Good, Very Bad Day.

Luckily, when things go wrong or I’m feeling downright irritable (which I was by this point), I know what to do: eat chocolate. Or in this case, drink chocolate. Generally, ingesting chocolate one way or another (has anyone tried a syringe?) is a pretty solid mood lifter. And I’m happy to say it did the trick today.

Of course, don’t wait until you have a bad day to make this epic hot chocolate. It’s thick, creamy, rich, and comforting, with subtle warming notes from the turmeric-ginger combo. And I do mean subtle: the main flavor here is dark chocolate, but I melt it into a mix of coconut cream, almond milk, and ginger-turmeric tonic for a truly special cup. Whether you feel like you’re on top of the world, at the bottom of a dumpster, or somewhere in between, this hot chocolate is guaranteed to lift your spirits.

Golden Porridge

February 19, 2018 By Alana Leave a Comment

Golden Porridge

When the sun decides to stay hidden for multiple days in a row and the weather is dark and gloomy, there’s nothing better than a bit of gold to brighten up your morning. Especially when that gold takes the form of a warming, hearty breakfast that will give you the fuel you need to start your day, sun or no sun.

This golden porridge is delicately spiced with turmeric, ginger, and cinnamon and uses a mix of gluten-free oats and quinoa flakes for a really lovely texture that is reminiscent of steel cut oats. Don’t panic though – there is a VERY big difference between this porridge and steel-cut oats: it doesn’t take forever to cook!

Finally, I love this recipe because you can customize it to your liking. I happen to be a turmeric freak and often make this with a full teaspoon of turmeric, but I’ve tried to tone it down for my readers. If it’s still a bit heavy on the turmeric for you, or you think it could really use more cinnamon, or maybe you’re feeling a nutmeg vibe, this recipe is yours to fiddle with. Spice it however you’d like. The same goes for sweetener: add a bit of maple syrup, coconut sugar, honey…whatever floats your boat. Or leave it unsweetened, which is what I’ve opted for lately. With some fresh fruit and a bit of candied ginger, I find that I really don’t crave any extra sweetener at all, and my body is happier for it.

So, ready to whip up a batch of porridge? Just make sure to store any leftovers far away from Goldilocks.

5-Spice + Turmeric Carrot Breakfast Pudding

August 10, 2017 By Alana 7 Comments

5-Spice & Turmeric Carrot Pudding

What if it were acceptable to eat pumpkin pie filling for breakfast? Would you? Even in summer? I might. Because this 5-spice + turmeric carrot pudding tastes like a breakfasty twist on pumpkin pie – in pudding form of course. The spices are subtle yet warming – the perfect start to your day – and the color is vibrant. And, as an added bonus, the fresh turmeric root provides a nice anti-inflammatory boost!

While this 5-spice + turmeric carrot breakfast pudding screams autumn, I find myself craving warming breakfasts like this year round. Would you expect anything less of a winter ice-cream eater? Anyway, if you’re not much for warming breakfasts in summer, this pudding is also fantastic cold. (In fact, if you chill it, it will taste even more like pumpkin pie filling.) I, however, actually prefer it warm,  with a splash of almond milk, a sprinkle of raisins, and some toasted coconut. The notes of molasses in the jaggery sugar compliment the cloves and pepper in the 5-spice perfectly, and the raisins add a nice bite.

So…breakfast pudding, anyone?

Ginger-Turmeric Tonic

February 23, 2016 By Alana Leave a Comment

Ginger-Turmeric Tonic

The weather these past few days has been so lovely that it was particularly difficult to wake up this morning and realize February is back. Yup, it is cold, grey, and wet. I also woke up with a sore throat, which added insult to injury.

On days like this, I’m really glad I keep fresh ginger and turmeric in the house at all times – a bit of fiery, warming tonic was just what I needed to overcome the gloom, nip the sore throat in the bud, and look ahead to sunny skies and carefree days.

Whether you’ve been overdoing it on sugar and sweets as much as I have lately, or you just need a bit of extra immune support, or you are super duper healthy and feel amazing, I recommend this tonic to you. Ginger and turmeric are both extremely medicinal and can do wonders for your body! Both are anti-inflammatory (turmeric, especially, has an often-cited compound called curcumin that does everything from inhibiting cancer cell growth to relieving pain in people with joint issues), amazing for maintaining overall well-being and health, and great for your digestive system. If you are interested in learning more about the health benefits of turmeric and ginger, I definitely encourage you to do your own research – there are way too many different health benefits to do them all justice in this short post!

Besides doing wonders for your health, I also find this tonic to be incredibly delicious. It’s wonderfully warming and intensely spicy – if you’re the type who always asks for extra ginger in your chai or juice, this drink is for you. You will feel the Bern! (Er…burn. I meant burn. I am not in any way affiliated with Bernie Sanders’ campaign. I will be voting for him, though :p)

I should mention that if you aren’t a fan of ginger or spice, this drink is probably not for you. You may want to return to some green tea, despite its far inferior light green color. (This tonic has the most beautiful dark reddish tint to it!)

Warming Spiced Lentil Soup

January 8, 2016 By Alana 1 Comment

Spiced Lentil Soup

There is something so incredibly nourishing about a nice, warm, hearty bowl of soup. And the aroma that fills the kitchen while it’s gently simmering on the stove is second to none. In fact, this particular soup smelled so good that I was reminded of the children’s story The Tale of Despereaux, which is set in a kingdom that holds soup in such high esteem that they have a holiday devoted to it every year! (That is, until a visiting rat is so entranced by the aroma of the Queen’s soup that he accidentally falls into her bowl, causing her to die of shock, which in turn causes soup to be outlawed in the kingdom!) Horrible, right? And what’s with rats being foodies in children’s stories, btw? (I recently rewatched Ratatouille.)

Anyway, I’m not going to ruin the book for you, but suffice it to say that the kingdom had it right: soup is so good that we really should have a holiday devoted to it. And if it were ever outlawed, I would totally join in on the illegal soup making that happens in The Tale of Despereaux. (Yes, there is illegal soup making … because soup is just that good!)

Savory Fall Smoothie

December 16, 2015 By Alana Leave a Comment

Savory Fall Smoothie

If you live in the Northeast like I do, you are experiencing a very strange December. I mean, it’s been in the 60s this entire week! People seem to be handling the uncharacteristically warm weather in different ways: some are freaking out, some are ecstatic, and some are taking it as a sign that a delicious pumpkin-based smoothie recipe I had thought was doomed to sit around until next fall is actually still very much seasonally-appropriate. (Okay, maybe just me for that last one!) But yes, I have a wonderful smoothie for you to savor during these last few (days? weeks? who knows at this point?) of warm weather, and I highly recommend that you make it before the snow hits!

This smoothie has a savory quality that I really enjoy. The frozen banana definitely gives it some sweetness – but there is also a complexity of flavor that differentiates it from your everyday smoothie. Pungent turmeric and ginger combine with creamy pumpkin puree, coconut milk, and fall spices; I chose to highlight these notes with a bit of celtic sea salt  (more than you would typically put in a sweeter smoothie) and the result was delicious.

Spicy Tofu Scramble

May 26, 2015 By Alana Leave a Comment

Spicy Tofu Scramble

I think that tofu scrambles get a bad rap. They are often the token vegan item on an egg-filled brunch menu, which doesn’t do them any favors. And it’s not because they can’t stand up to a good omelette; it’s because they’re often employed as an egg substitute. In my opinion, trying to make tofu taste like scrambled eggs is silly – even if you succeed, a less-good version of scrambled eggs is just not that exciting to eat for breakfast. (If you’re a vegan who really misses eggs, than okay, go for it. I do see the value there.) But I’d rather eat a tofu scramble that isn’t trying to be something else, because it really doesn’t need to be! Since tofu is a neutrally flavored food on its own, it can take on whatever flavor profile you want it to.  And that means you can infuse loads of delicious flavor into it, flavor that can provide serious competition for even the most delicious egg dish.
