Spiced carrot salad with fennel and olives

I tend to think a lot about food right before bed, probably because my mindless internet browsing of choice involves a lot of food blog scrolling. I’ll admit – it’s not a great habit. I end up having to expend a lot of will power in order to sleep on an empty stomach (which is definitely best for digestion, inflammation, disease prevention, quality of sleep…ugh, pretty much everything.) But I do sometimes get great ideas for what to make the next day!

I saw this salad from Smitten Kitchen during one of my pre-sleep food browsing sessions, and could not get the words “crushed olives” out of my head. I’ll spare you a detailed retelling of my dreams that night, but suffice it to say that the crushed olives made quite an impression on my subconscious. Anyway, I had some fennel stalks and fronds in the fridge (left over from making this lovely white gazpacho) and had been wanting to put them to good use, but – aside from the crushed olives – the rest of the salad didn’t look all that appealing to me. I’m not a fan of orange zest, and not that big on shaved fennel or fennel-centric dishes generally. I also didn’t have any fennel bulb  – just the stalks and fronds. What I did have was carrots! (You probably guessed that already.)

Now, one of my absolute favorite salads ever is Ottolenghi’s Moroccan carrot (which you can find here). So it occurred to me that I could do a sort of variation of that – but with the fronds, stalks, and olives from Smitten Kitchen’s recipe. I knew I wanted to vary up the spice mix a bit and simplify the recipe some as well. I also knew that I wanted to sauté my fronds, rather than leave them raw.

And thus, a perfect late summer/early autumn salad was born. I’m actually amazed that I got it so perfect on the very first try – measurements and all. It’s just the right amount of spice, just the right amount of tang, just the right amount of fennel (which I tend to prefer as an accent, not a centerpiece), and basically just balanced AF. The first night I made it, we ate it by itself for a late dinner.  The next day, we enjoyed it on our balcony with some barely warmed quinoa, simple sautéed chickpeas, and a cold kale and tomato dish. Blueberry-Fennel Salsa

Blueberry-Fennel Salsa

Tis the season to eat salsa! And oh, how numerous are the possibilities. I’ve always been one for experimenting with new flavor combinations so when I looked in the fridge and saw some blueberries fresh from the Union Square Greenmarket, along with some jalapeños and cilantro, I immediately thought blueberry salsa.

Now, I’m quite familiar with fruit salsas  – your standard pineapple one, for example, is pretty ubiquitous. But I couldn’t remember a time when I’d eaten a version made with blueberries. I also wasn’t 100 percent sure it would be a success. But I was fairly certain that one ingredient might be the key to marrying the sweet, fruitiness of blueberries to the savory spicy notes all good salsas should have, and that ingredient (drumroll please) was fennel. Specifically sautéed fennel, which has an onion-like texture and a lovely deep flavor.

So off to the market I went, eager to test out my theory. I thinly sliced my freshly-purchased fennel, sautéed it in some olive oil for 10 minutes or so (stirring frequently to promote caramelization as opposed to frying) and pulsed it up in a food processor with some jalapeño and cilantro. After seasoning with salt and lime, I sampled a bit. Yum! I almost wanted to eat it then and there – blueberries be damned – because it was really tasty! But delayed gratification is supposedly the mark of intelligence, so in went the berries. And voila! Blueberry-fennel salsa complete; snacking commencing in T minus…and that’s as far as my countdown got before my mouth was full of chips and salsa.

White Gazpacho

Ajo Blanco

Have you ever tried ajo blanco? Popular in Spain, it’s a white gazpacho made with blanched almonds and lots of garlic, thickened with bread. Even though I visited Spain before going gluten-free, I sadly never came across it.

If I had, I would probably be better able to describe to you whether my pecan gazpacho is indeed similar to ajo blanco. I can venture a guess that it is – it’s creamy, nutty, tart, and refreshing – and certainly resembles that classic Spanish white gazpacho visually. But there are several differences between this recipe and a traditional ajo blanco, which I’ll enumerate for my fellow cooking nerds below. For the rest of you, all you need to know is that this pecan-based version of white gazpacho is one of the best cold soups I’ve ever had.

So, how does this recipe differ from a traditional Spanish white gazpacho? Well, as I alluded to above, I’ve used pecans instead of almonds, soaked overnight for a smooth texture. Additionally, while ajo blanco does often feature green grapes, they aren’t typically blended into the soup, like I do here. Finally, there’s no bread at all in my recipe (don’t worry, the soup is still the proper texture without it!), I’ve used garlic-infused oil instead of raw garlic, and I’ve added a secret ingredient to top it all off: fennel. Blending in some fennel bulb with the pecans and grapes really creates a luscious, complex flavor that you probably won’t even be able to place right away. You’ll just know that you want to keep eating it.

Simple Citrus-Roasted Fennel

Simple Citrus-Roasted Fennel

We’ve been on a bit of an emotional rollercoaster weather-wise lately, at least in New York City. Beautiful, warm days followed by raw, biting cold. If your moods are severely impacted by weather (as mine are), it can be hard to stay uplifted when the temperature plunges and the wind picks up.

But there is a mood lifter – food. Rejoice in the fact that you can leave your oven on for 45 minutes, which in the warmer months feels at best irresponsible (if you have AC) and at worst like death (if you don’t). Embrace hearty, umami-laden foods like fennel and let your senses feast on bright, vibrant citrus (winter’s best candy). You’ll be feeling better in no time.

This dish is extremely simple but tastes quite complex. Sliced fennel is drizzled with olive oil, salt, and pepper; then covered with orange slices. The fennel becomes tender and meaty when left in the oven and is made even more delicious with the addition of a citrus-glaze which takes almost no time at all to prepare and which really takes this dish to the next level. (Once you make this glaze, I guarantee you’ll want to use it on other veggies too!) When everything comes out of the oven, you’ll be ready to emerge from your pile of blankets, no matter how cold it is outside.
